What you'll need:
180g 1 1/2 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
150g 3/4 cup sugar
2 egg (OR ½ cup apple sauce OR 1 tbsp flax seeds+3 tbsp water))
120ml 1/2 cups milk (dairy or plant-based)
3 very ripe bananas, mashed
1 tsp white or apple cider vinegar
80ml 1/3 cup neutral oil or unsalted butter
150g 1/2 cup chocolate chips
80g 1/2 cup walnuts or pecans
2 bowls
A whisk and a spatula
A scale (ideally) or standard measuring cups and spoons
A baking pan

This recipe can easily be halved for a small loaf pan.

Preheat the oven to 350 (180 celsius) degrees and grease (or line with parchment) a loaf, square or bundt pan.
Add vinegar to milk in a bowl and let sit a few minutes while you sift the dry ingredients.
In 1 bowl, combine the flour, baking powder, baking soda, salt, and sugar.
In the bowl with the milk, add in the eggs and oil, as well as the mashed bananas
Add the liquid mixture to dry ingredients and mix until just combined and there are no more flour streaks. Do not beat.
Pour cake into the pan and bake for 40-45 minutes, or until a toothpick comes out clean.
Alternative flavours:

Remove the bananas, increase milk by 120ml, and the vanilla by 1 tsp for a simple vanilla loaf.

Mash ½ cup raspberries and marble into batter once in the pan. Reduce liquid by ¼ cup.

Add lemon zest and poppy seeds to the dry ingredients, then top with lemon juice/icing sugar glaze while still warm.

Add 1 tbsp cinnamon and 1 diced apple or pear (reduce milk by 1/3)

Marble: mix 2 tbsp unsweetened cacao powder into half the batter and drop in spoonfuls over the base batter in the baking pan, and swirl into the batter in the pan with a knife.

Nutella marble: reserve 1/3 of the batter in the bowl after pouring into the baking pan. Add 2 tbsp of Nutella into the reserved batter, mix it well, and drop it by the spoonful over the batter in the pan. Swirl gently.
